New Mexico Welcomes Its First Rib Crib With New Record Sales

May 26, 2003: Principal Mike Knight of Red River Restaurants, Inc. opens the twenty-fifth Rib Crib unit in Clovis, New Mexico with Rib Crib’s newest record opening-week sales!

Mr. Knight also operates a Rib Crib in Sapulpa, Oklahoma and has a four-unit development agreement for Eastern New Mexico (Roswell) and Western Texas (Lubbock and Canyon.)
